- Al gusto orégano y sal
- 2 cebollas picada finamente para servir
- Orégano en polvo para servir
- Pan cortado

- Lavamos y picamos la pancita en trozos al gusto, lavamos las piezas de la pata
- Asamos en aceite los chiles, la cebolla y el ajo
- Hervimos los tomates junto con los chiles
- Licuamos, tomate, chile, ajo, cebolla y especias, luego los guisamos en un poco de aceite
- En una vaporera ponemos la pancita, la pata, el ajo partido a la mitad y la 1/2 cebolla, orégano, mejorana, tomillo y laurel, la llenamos con agua
- Ponemos al fuego a hervir, a las 3 horas ponemos la mezcla del mondongo antes de retirarlo del fuego ponemos sal y dejamos hervir un rato más. Lo puse al fuego con leña tardó 8 horas
- Salsa para servir: asamos todos los chiles, ajo, cebolla y tomate, lo ponemos en la licuadora con un chorrito de agua, sal y orégano, molemos.
